Beef Broccoli


You could grill up some steak for this recipe, but we use the Kirkland brand canned roast beef from Costco, which makes it an even easier recipe.


Ingredients:

Beef
Broccoli
Agave
Soy sauce
Garlic, 1-2 cloves minced
Orange (optional)

Directions:

Drain the juice from the canned beef into a large skillet, and bring to a boil. Let boil for a few minutes until it reduces. In a small dish combine equal parts soy sauce and agave (use more or less depending on how saucy you like your beef broccoli), garlic, the juice of half and orange, and some of the zest. Add in mixture along with the broccoli to the pan. Cover and let steam. Once broccoli starts to just get tender, add the canned beef. Cook until heated through and broccoli is cooked the way you like (I like it still a bit al dente). If the sauce is too runny, remove the beef broccoli from the pan and let the juices continue to cook until it has reduced and is thicker. Pour juice over beef broccoli and enjoy!

Variations:

You could try with chicken instead of beef. You could also add red bell peppers and onions.

Turkey Chili

A different take on the Chili recipe. I like to make a ton and eat it as a quick meal for the next couple weeks. I'm not sure on some of the measurements, I kind of just eyeball it.


Ingredients:

2 lbs. ground turkey (less than 7% fat) great to buy at Costco
1 giant can of diced tomatoes not sure on the oz. but its the huge one from Costco
1 large onion, chopped
5 cloves of fresh garlic, minced
2 tsp. garlic powder
2 tsp. onion powder
2 to 3 tsp. chili powder
1 to 2 Tbsp. oregano one time i accidentally added basil, but it tasted good so now I add a bit of basil as well 
Cayenne pepper to taste (optional) I actually add this, I like a bit of heat.
Salt and pepper to taste
(I recently started adding about 1 tsp. of cumin)


Directions:
Brown ground turkey in a large pot, add onions and garlic. Stir in tomatoes (I usually drain some of the juice from the can before adding). Add spices and simmer slowly until liquid reduces. The longer it cooks the more tender and flavorful. 





Lettuce Wraps


Ingredients
1 lb lean ground beef or turkey
fajita seasoning (low fat & sugar free)
vegetable mixture (bell peppers and onion)
lettuce leaves - I like the Boston lettuce

Directions
Brown the ground beef or turkey. Sauté vegetables in a medium-sized pan coated in cooking spray. Wrap both the meat and vegetables in lettuce leaves.

Lemon Oregano Fish


Ingredients
 100 grams whitefish I like Tilapia
asparagus (allowed amount)
juice of one lemon
1 t. oregano
salt & pepper

Directions
Preheat the oven to 400F.
Snap off woody ends of asparagus and discard.
Tear off a large sheet of non-stick aluminum foil.
In the center of this sheet, place asparagus spears and sprinkle with salt/pepper.
Place whitefish on top of asparagus.
In small bowl, combine lemon juice & oregano, and pour over fish.
Fold up edges and completely seal packet on all sides.
Bake 10-20 mins, until fish flakes.
Serve.

Cucumber Salad


Ingredients
         1 cucumber peeled, seeded and diced
         1 tomoto diced
         1/4 cup of green onions sliced
         1 tsp lemon pepper
         1 tsp garlic powder or 1/2 tsp chopped garlic
         1 tsp lemon juice
         4 oz raw meat - cooked any style and cubed into bite size pieces


Directions
Add ingredients into bowl and stir. It is much better with olive oil but it will do without it.

Number of Servings: 1

Baked Apples


Ingredients 
1 apple
1 serving Melba toast crumbs
Sprinkle of lemon juice
¼ teaspoon cinnamon
Pinch of nutmeg
Powdered stevia
Pinch of vanilla powder

Directions
Core the apple and cut in half. Mix Melba toast crumbs with cinnamon, nutmeg, vanilla powder, and stevia. Top apple halves with Melba mixture and bake for 15-20 minutes at 375 degrees until apples are soft and Melba toast topping is lightly brown. Top with Stevia and spices and bake. Serve warm.

Chili


Ingredients
1 lb Hamburger meat 5% fat
1 small onion
2 cans (15oz) diced tomatoes (sugar free)
1 t. chili powder
1 t. cumin powder
garlic salt
ground pepper
sweetener to taste


Directions
Brown the burger meat, onions and add the spices...add the canned tomatoes, and Sweetener to taste. Add water as necessary.

Number of Servings: 4

Lemon Ginger Asparagus


Ingredients
         Asparagus (allowed amount)
         ½ c. water
         ½ T fresh minced ginger root
         3 cloves minced garlic
         lemon zest
         black pepper

Directions
         1. preheat pan over med heat
         2. snap off woody ends of asparagus spears and discard
         3. snap spears into 2-3 pieces
         4. add garlic and ginger to the pan and cook for 2-3 mins
         5. add asparagus and water, bring to boil for 5 mins
         6. remove asparagus and top with lemon rind and pepper
         7. serve

Orange Asian Chicken


Ingredients
100 grams bite size pieces of chicken breast
1 orange
1/3 lemon
dashes soy sauce
1 tsp rice vinegar
1 tsp Truvia
1/8 tsp minced ginger
dashes garlic powder
dashes onion powder
tiny pinch red pepper flakes

Directions
Marinate (best in a baggie) chicken breast in ½ tsp grated rind of orange, 1 tbsp orange juice, 1 tbsp lemon juice, vinegar, sugar, soy, ginger, onion and garlic for as long as you can.
Pour marinade and chicken into a saucepan and sautee on med-high until chicken is done.  (8-12 minutes)  Great on salad with orange sections.
*Serve over lettuce with celery and apples.

Grilled Veggies


Ingredients
                  Zucchini
                  Peppers
                  Onion
                  Soy sauce
                  Mincied garlic
                  Salt

Directions
Wash and cut vegetables. Mix soy sauce, minced garlic, and salt. Pour sauce over vegetables to marinate. Grill.

*Delicious with steak.

Balsamic Dressing


Ingredients
         *Balsamic Vinegar, 24 tbsp
         *Grey Poupon Dijon Mustard, 3 tsp
         Garlic, .25 tsp
         Truvia Natural Sweetener, 3 serving


Directions
*Balsamic Vinegar, 24 tbsp
*Grey Poupon Dijon Mustard, 3 tsp
Garlic, .25 tsp
Truvia Natural Sweetener, 3 servings

Shake together. Makes 12 Servings.

Strawberry Spinach Salad


Ingredients
         2 heaping handfuls of Fresh Spinach
         1 handful of Strawberries (sliced)
         4 oz of raw meat (chicken, lean beef or shrimp)
         2 tbsp of celery seed vinegar- couldn’t find.
                  *added celery and purple onin
                  * used lemon juice and rice vinegar as dressing

Directions
chop spinach into bite sized pieces, slice strawberries
Cook 4 oz of meat however you see fit - grilled seems to taste best. cut into bite sized pieces and place in bowl with spinach and strawberries top with 2 tbsp of celery seed vinegar garnish with seseme seeds. Letting the mixture wilt a little really gives it a good taste.

BBQ Chicken Salad


Ingredients for chicken:
4 boneless chicken breasts (I use a package of chicken tenders)
1 T olive oil
1/2 T minced garlic
1 T soy sauce

Marinate four boneless chicken breasts in olive oil, garlic, and soy sauce.

Grill or broil chicken.

Ingredients for salad:
1 bag ice berg lettuce
1 bag romaine lettuce
1/4 jicama diced
2 c. shredded monterey jack cheese (I use whatever is in my fridge)
1 can black beans rinsed
1 can sweet white corn kernels
2 tomatoes diced

Mix in a big bowl.

Serve salad topped with chicken, tortilla strips, ranch dressing* and barbecue sauce.

*Cafe Rio tomatillo dressing is delicious on this salad.
