Ingredients:
2 c. almond flour/meal
2 t. baking powder
1/4 t. salt
1/2 c. butter, melted
4 eggs
1/3 c. water
1/3 c. liquid sweetener (blue agave)
2 t. cinnamon
1 t. vanilla
*You can also add 1 cup of fresh or frozen fruit.
Directions:
Preheat oven to 350 degrees
Mix dry ingredients
Add wet ingredients
Fill tins half full
Bake 15 minutes
Makes 18 muffins.

Toddler Muffins
*Let your toddler help you make them!
1/2 c. flour
1/2 c. whole wheat flour
3/4 c. oatmeal
1 tsp. baking powder
3/4 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3/4 c. brown sugar
1 egg
1/2 c. applesauce
1 tsp. vanilla
1 toddler size jar of sweet potatoes
1 toddler size jar of diced apples
Mix wet and dry ingredients separately. Then mix in dry ingredients slowly. Fill muffin tins about 3/4 full. Bake at 350 degrees for 16-18 minutes. Makes 12 muffins.
I use various combinations of fruit and vegetables. Use any combo that sound delicious. Prunes and peaches are popular at our house. Squash and carrots also work well together. Banana and pears are another favorite.
