Spicy Crab Salad

I love this salad!
I make a lot of it and eat it several days for lunch during the week.


Ingredients:

Salad
2 (3 oz) cans of crab meat
1 can black beans
1 can corn
corn chips
spinach

Dressing
3 T olive oil
juice of one lime
1/4 t. chili powder
1/4 t. cumin
garlic salt to taste

Directions:
Toss crab meat, corn, and beans together (I keep this mixture in a container in the fridge for later days).
Crunch corn chips in bottom of plate, then add spinach, and top with crab mixture. Drizzle with dressing.

Chili

Ingredients:
1 lb. extra lean hamburger meat
1 small onion
15 oz. diced tomatoes
2 t. chili powder
2 t. cumin powder
1 t. sweetener to taste
garlic salt to taste
ground pepper to taste

Directions:
Brown the beef then add onions. Add tomatoes and seasonings. Let simmer for 10 minutes.

Toddler Muffins

*Let your toddler help you make them!
Ingredients:
1/2 c. flour
1/2 c. whole wheat flour
3/4 c. oatmeal
1 tsp. baking powder
3/4 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3/4 c. brown sugar
1 egg
1/2 c. applesauce
1 tsp. vanilla
1 toddler size jar of sweet potatoes
1 toddler size jar of diced apples

Mix wet and dry ingredients separately. Then mix in dry ingredients slowly. Fill muffin tins about 3/4 full. Bake at 350 degrees for 16-18 minutes. Makes 12 muffins.

I use various combinations of fruit and vegetables. Use any combo that sound delicious. Prunes and peaches are popular at our house. Squash and carrots also work well together. Banana and pears are another favorite.
