Ingredients:
2 cubed chicken breast
2 cans chicken broth
1 large can stewed tomatoes
1 cup celery, diced
1 cup onion, diced
4 oz. can diced medium green chili
1 can pinto beans
1 can dark kidney beans
*chopped cilantro (I don't add cilantro because it upsets my stomach, but it does taste good)
garlic salt
*tabasco sauce (I don't add this either)
2 limes, squeeze in juice
To make it even creamier add a big can of pumpkin!
Directions:
Put ingredients in a big pot add extra water. Bring to a boil then simmer for 45 minutes.
Serve topped with corn tortilla chips, shredded cheddar cheese, and sour cream.

Chili
Ingredients:
1 lb. extra lean hamburger meat
1 small onion
15 oz. diced tomatoes
2 t. chili powder
2 t. cumin powder
1 t. sweetener to taste
garlic salt to taste
ground pepper to taste
Directions:
Brown the beef then add onions. Add tomatoes and seasonings. Let simmer for 10 minutes.

Salt Dough
Not exactly a food recipe, but one I thought worth having on here.
Salt Dough
2 cups boiling water
3 Tbsp. vegetable oil
1/2 cup salt
1 Tbsp. alum (you can find it in the spice aisle)
2 1/2 - 3 cups flour
Put the 2 1/2 c. flour, salt, alum, and vegetable oil in a bowl. Pour in the boiling water and stir. When stirring with a spoon becomes hard, use your hands. Add more flour if necessary until the dough is no longer sticky. Turn dough out onto counter top and knead in several drops of food coloring if desired.

Benihana Fried Rice
Fried rice similar to the kind you get at Benihana. Benihana Fried Rice
1 c Uncooked rice
5 T Butter
1 c Chopped onion
1 c Chopped carrots
2/3 c Chopped scallions (green onions)
3 T Sesame seeds (optional)
5 Eggs
5 T Soy sauce
Salt
Pepper
Cook rice according to package directions. In a large skillet melt butter. Add onions, carrots and scallions. Saute until carrots are translucent. Set aside. Heat oven to 350 degrees. Place sesame seeds in a shallow pan. Bake until golden brown (10 to 15 minutes), shaking pan occasionally for even color. Lightly grease another skillet. Beat eggs. Pour into hot skillet. Cook as you would scrambled eggs. Combine rice, vegetables, sesame seeds and eggs. Add soy sauce. Stir. Salt and pepper to taste.

2 t. cinnamon

*You can also add 1 cup of fresh or frozen fruit.

Mix dry ingredients
Add wet ingredients
Fill tins half full
Bake 15 minutes
Makes 18 muffins.

Cherry Bars
They feed a lot, are pretty to serve, and are cheap to make. They are also kind of a pain to make.
1 3/4 cup sugar
1 cup margarine, softened
1 tsp. vanilla
4 eggs
1 1/2 tsp baking powder
3 cups flour
2 (21 oz.) can cherry pie filling
Blend sugar, margarine, vanilla, and eggs until light and fluffy. Add dry ingredients. Preheat oven to 360 degrees. Spread 2/3 of batter onto greased cookie sheet. Spread fruit filling on. Put rest of batter by spoon on top.
Bake 35-45 minutes, until toothpick comes out clean.
Let cool
Icing
1 cup powdered sugar
1-2 Tbsp. milk
1/2 tsp. almond extract
Drizzle icing on top of cooked Cherry Bars.

Caramel Brownies
They are chocolatey, gooey, rich, and always a crowd pleaser. So here's the recipe...
Caramel Brownies
1 German chocolate cake mix
1/2 cup butter or margarine, melted
1/2 cup evaporated milk
1 cup nuts (optional)
30-35 caramels
1/4 cup evaporated milk
1 cup semi-sweet or milk chocolate chips
- Pre-heat oven to 350 degrees.
- Mix the cake mix, butter, 1/2 cup milk, and nuts in a large mixing bowl.
- Pour 1/2 to 2/3 of the batter into a 9x13 cake pan, and pat down.
- Bake for 6 minutes, take it out and let it cool for 10 minutes.
- In a double boiler or the microwave melt the caramels and 1/4 cup milk.
- Pour the mixture over the bottom layer of brownies.
- Sprinkle chocolate chips on top of the caramel layer.
- Drop remaining batter by spoonfuls on top of the chocolate chip layer.
- Bake for 12 to 15 minutes at 350 degrees.
- Let cool and serve.
Cafe Rio Pork
Whenever we go to Cafe Rio I usually order the beef, but for some reason I can't get enough of the pork when it's homemade. It's a great recipe for a warm day when you don't want to heat up your house using your oven. You just throw it in the crock pot, add a few ingredients, and you have enough pork to feed you for a month.

Cafe Rio Pork:
- 6 lb. pork roast
- 16 oz. bottle of salsa
- 1 can of Coke
- 2 cups brown sugar
Place pork in a crock pot and fill it half way up the pork with water. Cook on high for 5 hours. Drain off water. Cut pork in thirds. Mix together sauce ingredients and pour on top of pork. Cook an additional 3 hours on high. Shred pork with forks. Leave it on low or warm until ready to serve.
Creamy Tomatillo Salad Dressing:
- 1 packet Hidden Valley Ranch Buttermilk dressing
- 1 cup buttermilk
- 1 cup mayonnaise
- 3 tomatillos
- 2 cloves garlic
- 1 cup fresh cilantro
- 1/2 tsp. cayenne pepper
Blend all ingredients in a blender. Refrigerate.
*When I make this I use about a 1/4 tsp. of cayenne pepper, be careful it gets spicier once it sits in the fridge over night*
My favorite way to use these recipes is to make pork tacos. I love the soft corn tortillas. Heat the tortilla in a pan with some shredded cheese sprinkled on top, just until cheese is melted. Then add your pork, some lettuce, and drizzle on the dressing.
Also delicious in a salad, burrito, enchilada or quesadilla.
Peanut Butter Cookies
I got a recipe for the world's easiest peanut butter cookies a few years back out of a Kraft Food and Family magazine.
I love this recipe because it is super easy, very tasty, and I always have all the ingredients on hand (they are also gluten free).
Peanut Butter Cookies1 cup creamy peanut butter1/2 cup sugar1 egg
Preheat oven to 325ºF. Mix peanut butter, sugar, and egg until well blended. Refrigerate dough for 30 minutes. Roll dough into 18 (I never get more than 14) balls. Place, 2 inches apart, on ungreased baking sheet. Flatten each ball, in a criss-cross pattern with a fork.
Bake 18 to 20 minutes or until lightly browned. Let cool on wire rack.
*For a fun twist: After the cookies have cooled, dip each end into melted chocolate, then into finely chopped peanuts and refrigerate until the chocolate hardens.
*For a more healthy twist try using Blue Agave nectar or Stevia instead of the sugar.

So to start this thing I think we should just go through our own blogs are re-post the recipes we already have typed out. You can go to "edit posts" search for the title of the recipe post then "view" it select all, copy and paste it as a new post on this blog.

Toddler Muffins
*Let your toddler help you make them!
1/2 c. flour
1/2 c. whole wheat flour
3/4 c. oatmeal
1 tsp. baking powder
3/4 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3/4 c. brown sugar
1 egg
1/2 c. applesauce
1 tsp. vanilla
1 toddler size jar of sweet potatoes
1 toddler size jar of diced apples
Mix wet and dry ingredients separately. Then mix in dry ingredients slowly. Fill muffin tins about 3/4 full. Bake at 350 degrees for 16-18 minutes. Makes 12 muffins.
I use various combinations of fruit and vegetables. Use any combo that sound delicious. Prunes and peaches are popular at our house. Squash and carrots also work well together. Banana and pears are another favorite.
